<p data-start="3138" data-end="3472">Eriyen ve uzayan vegan mozza için basit formül:<br data-start="3185" data-end="3188" /><strong data-start="3188" data-end="3314">Su (bitkisel süt) + yağ (rafine hindistan cevizi yağı) + kaju püresi + tapyoka + asit (sitrik/laktik) + tuz + besin mayası</strong> → yüksek hız blender → tencerede <strong data-start="3348" data-end="3372">sürekli karıştırarak</strong> parlak–esnek kıvam → kalıba alma. Soğukken rende, sıcak–taze halde pizza üstünde <strong data-start="3454" data-end="3465">stretch</strong> verir.</p>
<h3 data-start="3474" data-end="3533">5) Feta–Beyaz Peynir Esintisi: Tofu + Asit + Salamura</h3>
<p data-start="3534" data-end="3840"><strong data-start="3534" data-end="3547">Firm tofu</strong> preslenir; <strong data-start="3559" data-end="3581">laktik/sitrik asit</strong> + tuz + elma sirkesi + miso (veya beyaz şarap sirkesi) + <strong data-start="3639" data-end="3655">deniz yosunu</strong> (denizimsi arka nota) ile <strong data-start="3682" data-end="3695">salamüra</strong> kurulur. 24–72 saatte tat derinleşir. <h3 data-start="3842" data-end="3904">6) Krem Peynir &amp; Ricotta: Badem/Kaju + Sıcak Şok + Limon</h3>
<p data-start="3905" data-end="4231"><strong data-start="3905" data-end="3923">Badem ricotta:</strong> Bademi kaynar suda soy, püre yap, <strong data-start="3958" data-end="4011">limon suyu + tuz + az elma sirkesi + besin mayası</strong>yla bağla. <strong data-start="4022" data-end="4033">Tülbent</strong>te 6–12 saat süz; hafif taneli–kremamsı yapı.<br data-start="4078" data-end="4081" /><strong data-start="4081" data-end="4106">Krem peynir (spread):</strong> Kaju + biraz hindistan cevizi yağı + limon suyu + laktik asit + tuz + çok az su; buzlukta 20 dk şok → blender → cam kavanoz.</p>
<h3 data-start="4233" data-end="4296">7) Sert/Blok Peynir: Agar veya κ-Karragenan ile Kalıplama</h3>
<p data-start="4297" data-end="4696"><strong data-start="4297" data-end="4305">Baz:</strong> Kaju/badem püresi + bitkisel süt + yağ + besin mayası + asit + tuz.<br data-start="4373" data-end="4376" /><strong data-start="4376" data-end="4393">Jelleştirici:</strong> 1–2% <strong data-start="4399" data-end="4407">agar</strong> (kesim için iyi, ısıda erimez) veya <strong data-start="4444" data-end="4460">κ-karragenan</strong> (dilimlenebilir ve ısıda yumuşama yapısı). Karışımı <strong data-start="4513" data-end="4532">kaynama hattına</strong> getirip <strong data-start="4541" data-end="4553">30–60 sn</strong> çevirin; kalıba dökün; 2–4 saat sonra bıçakla dilimlenir. Tat mimarisi için sarımsak tozu, soğan tozu, hardal tozu, hafif miso harika çalışır.</p>
<h3 data-start="4698" data-end="4761">8) “Mizansen” ve Tat Tasarımı: Umami ve Asidite Köprüleri</h3>
<p data-start="4762" data-end="5095">Vegan peynirlerde <strong data-start="4780" data-end="4789">umami</strong>yi artırmak için: besin mayası, miso (pirinç/arpasız beyaz miso), kurutulmuş mantar/tane kombu tozu, soya/tamari, fermente sarımsak–limon, küçük bir tutam <strong data-start="4944" data-end="4953">şeker</strong> bile (sadece tat parlatmak için) kullanılabilir. <strong data-start="5003" data-end="5011">Asit</strong> son dokunuşta tadı “peynirimsi” yapar; laktik asit tozu çok etkili ve kontrollüdür.</p>
